Disclaimer: As my first ever "foodie" post, please note this is not a food blog. I am not a chef that really measures (terrible at math & fractions) and I tend to forget to take pictures of my meals that I create, usually because I am so hungry by the time they are complete. Most of my meals I cannot recreate. Oops.

This yummy meal came about after one of "those days." You know, when you are scrounging for ingredients because you were out all day only to realize you have a sack of potatoes, rotisserie chicken and some barbecue sauce. I know, let's just throw it all together! Mind you, I had to search online on cooking potatoes in the oven. Thank goodness for the internet and the bazillion apps that we can use to look up recipes, although I don't usually get that far.

I tend to throw things together that sound like they would taste good. I love BBQ sauce, chicken is my kryptonite (especially Costco's rotisserie style), and while I can live without potatoes, they offer a nice starch to my meal. Luckily, my kids will always (usually) try my new creations and thankfully they seem to like them enough to finish their plates. 

I cook gluten-free, but my family members are not strictly gluten-free. Anything that isn't cooked to my high allergy standards, my hubby or daughters will take the reigns. I have yet to share my GF story, but I will one day. :) 

We started with washing and dicing the potatoes. Then, my lovely #3 daughter decided to help me out with the chicken. She was very excited about ripping the rotisserie chicken to shreds which almost worried me, but she was a big help so I didn't think too much of it. She used clean hands (she's a serious germaphobe) and a butter knife to get the job done. She was squealing with delight the whole time, having so much fun. She did want to make sure no photos of her "crazy hair" were taken.

Ingredients 

(Just remember you'll have leftovers. This fed my family of 7!)

  • 1 Rotisserie Chicken shredded or cubed
  • 1 Bottle of Kinder's Organic & GF BBQ Sauce
  • 10- 12 medium sized potatoes, cubed
  • 1 cup crumbled bacon pieces or more (the eldest is bacon obsessed we might have used a whole pack)
  • Shredded Cheese (We love cheese, so we use a lot)

Get to Cooking!

  • Mix the chicken, potatoes, and sauce together in a bowl 
  • Place chicken mixture in a 9 x 13 greased pan
  • Layer with bacon and cheese 
  • Cook at 375º for 30 minutes or until cheese bubbles and the edges begin to brown
  • Let it cool a tad before serving, the sauce gets really hot!

This is a great, easy dinner, especially if you have some helpers to shred the chicken and/or crumble the bacon while you cut potatoes! The kids really enjoyed it! Stay tuned, we have more adventures in the kitchen planned!
